I'm only new to airsoft but I would say that you should learn both left and right handed shooting if your weapon permits it to make the best use of the cover available to you!

Anything with molle straps - seriously, anything. Normal ones are hydration carrier and radio pouch. If your part of a large organised team then mag pouches and grenade pouches can go on the back for your buddy to draw for you if needs be.
To add a bit to the ambi m4 malarkey - king arms make a series of components that allow you to rig almost any M4* with an ambi selector.
*Subject to part tolerances. I believe the airsoft word for that is fitment *shudders*

Studies show that left handed people can more easily learn to use their right hand to do things.
It is a fact that right handed people cannot be ambidextrous, however left handed people can learn to predominately use their right hand. As god intended :P
And as for the latest question, mine always sport a hydration pack. As its thirsty work propping up the tea urn at GZW.

I've always found it easy enough to flip the fire selector switch and press the mag release with my finger, but I guess it depends what you're accustomed to.

The gr16s/tr16s have an indicator on the right of the body that moves with the selector, to which another selector lever can be screwed/epoxied too.

The only problem you'll really have is with a bolt action. As a lefty (and ex-rifle instructor) I've never given a second thought to the controls on a gun. You get so used to dealing with the fact that most of them are designed for the common righty (some a lot more common than others
). I shoot handguns left handed but can shoot a rifle comfortably off either shoulder and when I got my first M9 I promptly swapped the magazine release around for left handed use. Mistake, I was so used to the controls being set up for right handed use it actually slowed down mag changes.
Just buy what you like. After your first skirmish you won't think there are any problems.
