Would quite like an MP5 but there's loads of different models, any advice or recommendations on which one to get?

What's your budget?
I use an ICS and it's fantastic, and the CA B&T line are awesome as well. They're generally considered the best brands for MP5s
If you fancy electric blowback, then the Cyma and G&G will do you right but I'd take either of the above two over them any day

i use ics and for model i like the sd5/6 as collapsable stock is cool, but a4 for solid stock is good as well

solid stock feels more comforatble and solid than the collapsable stock im my opinion but its down to you, folding stock is easier to fire one handed if your carrying something else or id you want to dual wield

Up until an hour ago I had the ICS mp5 sd6 mainly because it just looks more modern, and the sliding stock gives you the flexibility to use in different environments. Stock out for taking aimed deliberate shots, or slide it in to move around in confined spaces like dense undergrowth or tight urban. Once slid in, it can be slung over the back and being lightweight, you hardly notice its there. Good solid all rounder and still packs a punch.

I have a Classic Army B&T MP5A5 and can certainly say that if your going MP5, either Classic Army (Hard to get hold of now) or alternatively the ICS ones are to go for. Just my 2 pence

Quite like the ICS MP5A2, prefer the solid stock. Are there any others you could recommend? I'm new to airsoft but currently have an AUG A3 that i'm selling.

Your best option is to get hands on with as many variants as you can, and make your mind up based on budget at the time. Get to know the regs at your site, and before you know it, they will be loading you up like a mobile armoury...
