firstly you will never know how many rounds he/she actually has. and frankly if you can change 4 mags and fire off 120 rounds in the same time as they can fire 120 i would be very bloody impressed.
the answer is really very simple.
DON'T MISS.
I know that sounds rather patronizing but it is true. I know that at least 80% of the time i can shoot more accurately than those shooting at me. so it doesn't matter how many rounds they are firing if they just miss.

i've done my first skirmish with (5) real caps today.... was great fun reloading but not in the middle of a fight with a hi-cap user! It completely changes your playstyle. I used to charge alot but now I am sneaky and quiet as I only have the 30 bb's per mag. It's actually made me a better player.... I swapped mags with my friend for 1 game (he uses 2 hi-caps) and he preffered the real caps. No winding, no rattling, no spraying! You have to pick your shots carefully so that you don't give away your position (which is a very bad thing to do if your enemy has a hi-cap mag)
Once you get your reloading down, real caps are the way to go in my opinion

I only use mid-caps, but versus people with better guns, movement is a POTENT leveller. I cottoned on to this the other day at the Gunman Herts weekender. There were a few, like, demonic guys ( all on the other team as usual :p) who were taking us all out with with these gas pistols. Now to be fair they were pretty good shots, but no joke, it was the movement that screwed us up the most. When I started trying to emulate their running about, albeit with a rifle, I found myself getting more hits and doing much less pruning rhodadendrons.
Standing still inevitably gets you into a pitched firefight which WILL average out in favour of the party that can fire further, better, or simply more often. Not always you :D
If, on the other hand you are constantly moving (up, round, sideways whatever) you deny the enemy a target to shoot at at all. As you said, it can take say 3 seconds for the average airsofter to lock on and start hosing the particular tree you've moved to. Which means if you only pause 2 seconds at each tree before moving on, you'll have them chasing you about with their muzzle but never actually hitting anything. Just wasting their ammo.
All the while you haven't fired a shot. You keep moving up on them until 30 rounds is loads since you could make the shot in 3.

^Yes, yes, yes. ^ The best thing to do if someone starts firing at you is sidestep a little and send a couple back. Can't count how many kills I've got like this (that might be a result of poor maths though :D)
